Lamb Koftas with Sweet Potato and Pea Salad Recipe
This episode of Omar Meziane and James' cooking show is their first lunch/afternoon meal recipe.
They are serving up a lovely dish of Lamb Koftas with Sweet Potato and Pea Salad. Watch below:
200g lean minced lamb
1 clove garlic finely chopped
1 pinch cinnamon
1 pinch cumin
1 pinch curry powder
1 medium sweet potato
1 tbsp. chopped mint
In a bowl combine the lamb, garlic, cinnamon, cumin and curry powder and mix well. Season with salt and pepper. Make into 4 kebabs and place onto a tray and put them into the fridge for at least 30 minutes.
Meanwhile leaving the potato whole, place it into a preheated oven at 180oc for 30 minutes.
Once the potato is cooked through leave to cool slightly. Now peel away the skin and roughly chop the potato.
Place the potato into a bowl along with the mint.
Blanch the peas in boiling water and then drain. Mix the peas with the sweet potato and leave to one side.
Now place the lamb Koftas into the oven at 180oc for 10 minutes. Once cooked serve with the sweet potato salad
