JHTV Recipe: Curried Salmon Kebabs with Pilaf Rice

In the last instalment of James and Omar's JHTV Recipe show they are cooking up a treat for us.

On the menu today is curried salmon, it only takes three ingredients to make this dish so delicious. Omar and James are serving this dish with pilaf rice, however, you can serve with whatever suits you.

This dish, in James' opinion, is one of the best dishes Omar has created for JHTV Nutrition, so check it out here:

Serves 1

Ingredients

2 wooden skewers

1 fillet of salmon

150g brown rice

2 tbsp. curry powder

1 tbsp. natural yoghurt

25g sultanas

1 handful baby spinach leaves

1 tbsp. coconut oil

3 dried apricots

½ red onion finely chopped

1 tbsp. desiccated coconut

Method

Cut the salmon into bite size pieces and place into a bowl with half the curry powder and the yoghurt. Mix well and leave to marinade for 30 minutes.

In an oven proof dish add the remaining ingredients and cover with water. Cover the dish with tin foil and place into a oven at 180oc for 20-30 minutes, or until the rice is cooked through.

Now skewer the salmon pieces and place into an oven at 180oc for 8-10 minutes. 

Once cooked serve with the pilaf rice.
