Breakfast Recipe with Roast Turkey, Chorizo and Egg
Tonight's 6.30pm JHTV Nutrition video is another brilliant breakfast dish.
Roast Turkey, Chorizo and Tomato with Egg - all thrown in together to create a nutrient-filled, easy to make and extremely tasty meal.
This recipe serves one.
2 slices of turkey breast (cooked)
50g chorizo roughly chopped
1 handfuls baby spinach
1 plum tomato finely chopped
You will need a good quality muffin tray either metallic or silicon will do.
Line two of the muffin cases with the turkey, it does not matter if there are a few holes in the turkey slices.
In a small pan without any oil gently cook the chorizo over a medium heat until crispy and the oil has started to seep.
Next place the spinach into the pan with the chorizo and cook until the spinach has wilted. Remove from the heat and drain the chorizo and spinach onto kitchen paper.
Once patted dry, divide the spinach and chorizo evenly between the two turkey slices.
Now crack each of the eggs over the chorizo and spinach. Sprinkle the tops with the chopped tomato and place into the oven at 180oc for 10-12 minutes.
Remove from the oven and serve immediately.
