Salmon with Lime & Chilli, Butternut Squash & Cous Cous Salad - tastes as good as it sounds
Once again on JHTV Nutrition we provide you with a great recipe for a lunch or dinner using ingredients that are inexpensive and easy to source.
This dish in particular is simple to follow, the ingredients are super healthy and easy to come by and the taste is amazing - the perfect combination!

1 fillet of salmon
1 small chilli
½ butternut squash
100g cous cous
1 tbsp. sultanas
1 tbsp. chopped mint
Season the salmon with salt and pepper and place into a bowl. Squeeze half the juice of the lime over the salmon. Chop the chilli and rub into the salmon. Leave the salmon to marinade for 10 minutes.
Cover the cous cous with cold water and leave to one side for 15 minutes. Once the cous cous has absorbed all of the water and is soft to the touch crumble between your fingers. Now mix the sultanas, mint, almonds and blueberries into the cous cous.
Place the salmon into a preheated oven at 180oc for 8-10 minutes.
Once the salmon is cooked serve with the cous cous
