Healthy, Nutritious Breakfast Recipe - Baked Eggs with Smoked Mackerel
James and top nutrition chef, Omar Meziane, are back in the kitchen again cooking up a super healthy breakfast of Baked Eggs with Smoked Mackerel, Spinach and Beetroot.

Baked eggs with Smoked Mackerel, Spinach and Beetroot Recipe:
This dish can be pre-made the night before, ready for cooking the following morning.
The ingredient quantities specified are for a single serving. So just increase on a pro rata basis for all additional servings.
2 x medium eggs
1 x standard size fillet of smoked mackerel
1 x handful baby spinach leaves
2 x cooked beetroot
50g x butterbeans cooked
100ml x tomato sauce
Combine the butterbeans with the tomato sauce and adjust seasoning to suit your personal preference if required.
Pour the bean mixture into the bottom of an oven proof bowl.
Now place the spinach leaves over the bean mixture.
Cut the mackerel fillet into bite size pieces and place them into the bowl.
Finally crack the 2 eggs over the mackerel.
Place into a Pre-heated oven at 180oc for 10-12 minutes.
Once cooked serve immediately.
